An iced strawberry matcha latte in three layers with fresh strawberries

Strawberry Matcha Latte: The Easy Layered Recipe

Strawberry matcha is the drink that made matcha pink and green on social media, and it is easy to make at home in about five minutes.

Sweet, slightly tart strawberries balance matcha's grassy notes, and the creamy milk ties them together. The layers look impressive but only need a slow pour.

Prep: 5 min · Makes: 1 glass

Ingredients

  • 4–5 ripe strawberries (or a handful of frozen, thawed)
  • 1–2 tsp honey or maple syrup (optional)
  • Ice
  • 150ml cold milk (oat works well)
  • 1 heaped tbsp (10g) Mind Full Matcha
  • 30ml hot water (about 80°C)

Each drink uses one 10g serving of Mind Full Matcha: 40mg of caffeine, and 50kcal with 0.8g of sugars before milk and sweetener. The blend contains oats.

Method

  1. Make the strawberry base. Mash the strawberries with the honey or maple syrup until jammy and spoon into the bottom of a tall glass.
  2. Add ice and milk. Fill the glass with ice, then pour in the cold milk slowly so it sits above the strawberry.
  3. Make the matcha. In a small cup, mix 1 heaped tablespoon (10g) of Mind Full Matcha with a splash (about 30ml) of hot water at around 80°C into a smooth paste.
  4. Layer. Pour the matcha slowly over the back of a spoon so it settles on top. Stir before drinking.

Tips for the best result

  • Keep the milk very cold for clean layers.
  • Frozen strawberries, thawed, make a thicker, jammier base.
  • Taste the strawberries before sweetening: ripe ones may not need any.
  • Use a clear glass to show off the layers.

Variations

  • Strawberry cream: add a spoonful of yoghurt to the strawberry layer.
  • Blended: blitz the strawberries with the milk for a pink base.
  • Hot: not recommended, as fresh strawberry is the point of this one.

Make ahead and storage

Mash a few portions of strawberry and keep them covered in the fridge for up to 2 days. Make the matcha fresh.
